"Pfirsich Kuchen" - Peach Cake

Summer means peaches. And a lot of them. What better way to process the abundance than baking a cake. This on is inspired by the cake my Mutti used to make back in Germany when I was little.


Preheat oven to 375ºF.

  1. Take a stick of butter (8 tbsp) and melt it. Add 1 cup of sugar. Beat until mixture is foamy. Add two eggs and 1/2 cup of milk (oat milk or other plant based milk works too) and beat well.

  2. In a big bowl combine 1 1/3 cup of flour with 2 tsp of baking powder, 1/2 tsp of salt.

  3. Add the butter, sugar, milk and egg mixture to the flour and mix well. It should be all gooey.

  4. Grease a pan abut 9x9 inches and 2 inches deep. Put 1/2 the mixture in it and top it with sliced peaches (about 3-4). Sprinkle with lemon zest and juice of 1/2 lemon. Add the second 1/2 of the batter.

  5. Sprinkle some turbinado sugar on it and bake for about 40-45min until golden brown on top.
